Green beans

Organic green beans from Makaria FarmWe usually just eat our green beans raw as a snack or cut up into a salad, or saute them for 10 minutes or so in butter and crushed garlic.

For fancier recipes, here are some good ideas we’ve found:

Val’s Marinated Green (and/or Dragon Tongue) Beans

  1. Mix your favourite vinaigrette and pour into a bowl
  2. Steam fresh beans briefly: they should still be crisp
  3. Drain beans (if necessary) and stir into the vinaigrette
  4. Let beans sit in marinade for 1 hour or overnight (beans may lose their bright colour if marinated overnight)
  5. Get fancy: wrap in proscuitto, stir in nuts … or simply enjoy as-is

Japanese-style Green Beans

  1. Warm a large skillet or wok over medium heat.
  2. When the skillet is hot, pour in 1 tbsp canola oil and 1 1/2 tsp sesame oil, then place whole green beans into the skillet.
  3. Stir the beans to coat with oil.
  4. Cook until the beans are bright green and slightly browned in spots, about 10 minutes.
  5. Remove from heat, and stir in 1 tbsp soy sauce.
  6. Cover, and let sit about 5 minutes.
  7. Transfer to a serving platter and sprinkle with 1 tbsp toasted sesame seeds, nuts, or whatever floats your boat.

Bacon-wrapped Green Beans

    Steam, boil or saute green beans for 5 minutes.

  2. Cool beans, then wrap 6-10 beans into a bundle with a strip of uncooked bacon.
  3. Pace bundles in a baking dish and sprinkle with any seasonings you like: salt, pepper, chilli powder, garlic salt, etc.
  4. Pour melted butter over the bundles and sprinkle brown sugar (optional).
  5. Bake at 350 degrees for 15-20 minutes, or until the bacon is cooked to your liking.
